Born and raised in Adelaide, Australia, Dane Hirsinger has been working in specialty coffee for 20 years – first in his home country, then in his own coffee shop in London, and later at Kaffee 9 in Berlin. During the pandemic, Dane made the move to Copenhagen, and in the autumn of 2022, he opened the doors to Wild Horses. Here, it's all about Australian feel-good vibes, specialty coffee, and simple dishes that will keep you coming back for more. Not to mention, just last week the café received a 5 out of 6 star rating from Politiken.

Pick whatever you like at Wild Horses in Sydhavn. Enjoy sourdough bread with butter and Vesterhavs cheese, or choose from the daily selection of pastries. Taste yogurt with granola, sweet apple compote, and fresh mint. Get a grilled cheese sandwich on crusty sourdough bread with Vesterhavs cheese, pickled red onions, and chili jam. Delight in the daily salad, such as sweet potatoes with dukkah, smoked yogurt, fresh greens, cucumber, and feta. Sip on lightly tart lemonade with turmeric, lemon verbena, and honey. Enjoy everything from an espresso or batch brew to flat whites and lattes – all brewed with seriously good beans.

Wild Horses is the kind of place where you strike up a conversation with your neighbor, listen to great vinyl music, and order yet another cup of coffee. The owner, Dane Hirsinger, has a warmth about him that is contagious. He brings a simple Aussie approach along with a vast network of small coffee roasters that supply the café with beans. And, of course, the coffee is served in cups by Heinous Monk (Dane's former neighbor), who crafts ceramics in his Norwegian forest cabin.
