Small bakeries have sprung up all over Copenhagen, and just when many thought the level couldn't get any higher, it has happened again. Even before opening, Bageriet benji was making headlines in Denmark's biggest media outlets. Since day one, the buzz has been entirely organic. For two years, Rasmus Kristensen was in charge of bread and pastries at Noma. He's one of Denmark's top bakers and believes that Copenhagen needs more good bread. That's exactly why he has opened the doors to benji.

Stick with the classics, such as buttery croissants and cardamom buns, or opt for something a little more adventurous, like their spandauer with Noire Fendue vanilla, fresh raspberries, and a sprinkle of rosehip. Indulge in citrus-infused chocolate swirls made with lemon, orange, almond remonce, and 70% dark chocolate. Savor potato swirls with parsley and potato, brushed with butter, garlic, and lemon zest. The interior of the bakery is open and airy, giving customers a view of the bakers as they work their magic. There’s no real seating to speak of, and you won’t find fancy espressos on the menu. They like to keep things somewhat understated and prefer not to talk too much about their owner's background, but that's challenging when it's Rasmus Kristensen at the helm. At Bageriet benji, named after Rasmus’ son, he has devoted himself to what he does best – sourdough and Danish pastries, often with a personal twist. He is uncompromising in his approach to ingredients, and the craftsmanship is top-notch.
