They’re on a mission to make hyper-local and super-fresh beer accessible to everyone. Some would even say tank-to-tap is becoming the new farm-to-table. See what it’s all about and embark on a shopping spree in their bottle shops, either at BRUS in Nørrebro or the main brewery in Svinninge. You can also grab a seat at BRUS bar and choose from a 32-tap selection of beers, cocktails, and more. If you’re not sipping something on the spot, these drinks are best enjoyed at home in front of a warm fire. Just don’t forget to leave one for Santa.
WHAT YOU GET
Pick whatever you like at To Øl. Fill up your fridge with beers and cocktails from one of their bottle shops, or imbibe a few brews at the lively BRUS bar. Better yet, do a bit of both. Have something extra hoppy like #DIPA, brewed with Citra and Simcoe hops. Sip on Stereo Mono Mosaic, a juicy DDH Single Hop IPA with tropical, citrusy, and slightly piney notes. Opt for 45 Days Organic Pilsner, or taste Utopian Tones, a spelt ale with honey from the To Øl Natur collection. If you’re in search of a Session IPA, try Snublejuice, Minima Session, or Trouble Juice. Get Berry Barrage (Sour), Mine is Bigger Than Yours (Barley Wine), or Birramisu (Imperial Pastry Stout). Up the alcohol ante with Cryo Out Loud (Triple IPA), or go alcohol-free with Implosion (Non-ABV IPA). To Øl is the tale of two friends, Tore and Tobias, who began brewing beer in their high school cantine back in 2005. Nearly two decades later, that youthful, innovative spirit is alive and well. The first commercial beer was released in 2010, and after several years of brewing in far-away facilities, they opened BRUS as a local brewery, bottle shop, and bar in 2015. In 2020, they hit a whole new level with To Øl City, a 26.000 square meter brewing facility in Svinninge. Even still, everything is brewed in relatively small batches, so the beer selection rotates regularly. The team at To Øl says, ‘There’s always room for one more’. They mean at the bar, but it could also apply to your home beer collection.
